Gujarati Kadhi

Makes one serving Ingredients: 1/2 cup plain yogurt 1/2 cup water 1 tablespoon besan (gram flour) 1/4 teaspoon turmeric powder Salt to taste 1 green chili, finely chopped 1/4 teaspoon ginger paste 1/2 tablespoon oil 1/4 teaspoon mustard seeds 1/4 teaspoon cumin seeds A pinch of asafoetida (hing) 4-5 curry leaves 1 tablespoon chopped coriander leaves for garnishing

Plain curd

Preparation

1. In a bowl, whisk together the yogurt, water, gram flour, ginger and green chili paste, turmeric powder, sugar, and salt until well combined.

2. Heat the oil in a small pan over medium heat. Add the mustard seeds and cumin seeds. Once the mustard seeds start popping, add the asafetida and curry leaves and fry for a few seconds.

3. Pour the yogurt mixture into the pan and stir well. Bring to a boil and then reduce the heat to low. Simmer for 8-10 minutes, stirring occasionally, until the kadhi thickens slightly.

4. Serve hot with steamed rice or roti.
