Wheat Pasta with Vegetables
Makes one serving Ingredients: 1/2 cup uncooked wheat pasta 1/4 cup diced mixed vegetables (such as bell peppers, zucchini, carrots, and onions) 1 tbsp olive oil 1 garlic clove, minced 1/2 cup tomato puree Salt and black pepper, to taste 1 tbsp grated Parmesan cheese (optional)

Ingredients for this Recipe
Uncooked wheat pasta
1/2 cup
Diced mixed vegetables (such as bell peppers, zucchini, carrots, and onions)
1/4 cup
Olive oil
1 tbsp
Crushed garlic
1/2 tsp
Tomato puree
1/2 cup
Grated parmesan cheese
1 tbsp
Salt and pepper to taste

Preparation
1. Cook the pasta according to the package instructions in a pot of boiling salted water until al dente. Drain the pasta and set it aside.
2. Heat the olive oil in a pan over medium heat. Add the minced garlic and diced mixed vegetables, and sauté for 2-3 minutes or until the vegetables are tender.
3. Pour in the tomato puree and season with salt and black pepper. Stir well and let it simmer for 2-3 minutes.
4. Add the cooked pasta to the tomato puree and toss until the pasta is well-coated with the puree.
5. Transfer the pasta to a serving dish and sprinkle grated Parmesan cheese on top, if desired.
