Lemon Rice, Curd

Makes one serving Ingredients: 1/2 cup cooked Rice 1 tbsp Oil 1/2 tsp Mustard Seeds 1/2 tsp Cumin Seeds A pinch of Asafoetida (Hing) 3 tbsp Peanuts 1 Green Chili, finely chopped A few Curry Leaves Salt to taste 1 tbsp Lemon Juice A few Coriander Leaves, finely chopped

Cooked rice

1/2 cup

Oil

1/2 tbsp

Mustard seeds

1/4 tsp

Cumin seeds

Asafoetida

Peanuts

Green chilli, chopped

1/4 tsp

Curry leaves

Preparation

1. In a pan, heat the oil over medium heat.

2. Add the mustard seeds and cumin seeds. When they start to splutter, add the asafoetida.

3. Add the peanuts and sauté until they turn golden brown.

4. Add the finely chopped green chili and curry leaves. Sauté for a few seconds.

5. Add the cooked rice and salt. Mix well.

6. Add the lemon juice and mix well again

7. Garnish with some chopped coriander leaves.
