Sama Pulao

Ingredients: 1 cup sama rice (barnyard millet) 1 small potato, diced 1/4 cup green peas 1 teaspoon cumin seeds 1 teaspoon grated ginger 1 green chili, chopped (adjust to taste) 2 cups water Salt, to taste 1 tablespoon oil or ghee (clarified butter) Fresh coriander leaves, for garnishing

Sama rice (barnyard millet)

Preparation

1. Wash the sama rice thoroughly and set it aside to drain.

2. In a pan, heat oil or ghee over medium heat.

3. Add cumin seeds and let them splutter.

4. Add grated ginger and chopped green chili. Sauté for about 30 seconds.

5. Add diced potato and green peas. Sauté for 2-3 minutes.

6. Add the drained sama rice to the pan. Mix well with the vegetables.

7. Add water and salt. Stir gently.

8. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan with a lid, and let it cook for about 15-20 minutes or until the rice is tender and the water is absorbed.

9. Once the rice is cooked, remove the pan from the heat and let it rest for 5 minutes.

10. Fluff the rice gently with a fork to separate the grains.

11. Transfer the pulao to a serving dish and garnish with fresh coriander leaves.
