Vegetable Fried Rice

Makes one serving Ingredients: 1/2 cup cooked rice 1/4 cup mixed vegetables (carrots, beans, peas, cabbage, etc.), chopped 1/4 onion, finely chopped 1/2 tsp ginger, grated 1/2 tsp garlic, minced 1/4 tsp black pepper powder 1/2 tsp soy sauce 1/2 tsp vinegar Salt to taste 1 tsp oil 1 spring onion, chopped (for garnish)

Preparation

1. Heat oil in a pan and add onion, ginger, and garlic. Sauté for 1-2 minutes until the onion becomes translucent.

2. Add the mixed vegetables and stir fry for 2-3 minutes until the vegetables are cooked but still crispy.

3. Add black pepper powder, soy sauce, vinegar, and salt. Mix well.

4. Add the cooked rice to the pan and mix everything well. Stir-fry for 3-4 minutes until the rice is heated through.

5. Turn off the heat and garnish with chopped spring onions.

6. Serve hot.
