Preparation
1. In a mixing bowl, add rice flour, grated coconut, and salt to taste. Mix well.
2. Gradually add water and stir well to form a smooth batter without any lumps. The batter should be thin and watery, similar to the consistency of buttermilk.
3. Heat a non-stick tawa or a non-stick pan over medium heat.
4. Grease the tawa with a little oil.
5. Pour a ladleful of batter onto the tawa and spread it in a circular motion to form a thin dosa.
6. Drizzle some oil around the edges of the dosa and let it cook for 1-2 minutes until the edges start to turn golden brown.
7. Once the edges are golden brown, use a spatula to loosen the edges and flip the dosa to cook the other side.
8. Cook the other side for another minute or until it is lightly golden.
9. Once cooked, remove the dosa from the tawa and fold it in half or roll it.
10. Repeat the process with the remaining batter.
11. Serve hot with your favorite chutney or sambar.
