Oats Vegetable Soup

Makes one serving Ingredients: 1 cup vegetable broth 1/4 cup chopped mixed vegetables (carrots, celery, onion, bell pepper) 3 tbsp oats 1/4 teaspoon dried thyme 1/4 teaspoon dried oregano Salt and pepper to taste Fresh parsley for garnishing

Vegetable broth

Mixed vegetables

Thyme

Oregano

Preparation

1. In a small pot, bring the vegetable broth to a boil.

2. Add the chopped mixed vegetables, oats, dried thyme, dried oregano, salt, and pepper to the pot.

3. Reduce the heat to low and let the soup simmer for 10-15 minutes or until the vegetables are soft.

4. Remove from heat and let it cool for a few minutes.

5. Serve hot, garnished with fresh coriander.
